Mikkeller, Copenhagen, Denmark

This is like the HQ for the International Convention of Beer Geeks, except it rocks. It was started by Mikkel Borg Bjergsø, a former math and physics teacher who’s pretty much the Heisenberg of the brewing world, doing to beer what the bad bald man did to crystal meth. Mikkeller beers are available all around the world – they have two additional bars in Copenhagen, one in San Francisco, and the most recent in Bangkok – but this is where it all started. There is a rotating menu of 20 microbrews on tap (10 by Mikkeller), and you can soak up those hops with some serious smoked sausage. Just like their beers break with convention, so does their style; it looks more like a low-key wine bar than a brew pub, and in summer, the outdoor picnic tables are packed.
