SANDWICH #4
Merguez and Frites Sandwich
Sara Jenkins, of Porchetta, Porsena
Makes 4 sandwiches
4 sandwich rolls
½ cup harissa aioli*
2 oz frozen French fries
8 sprigs cilantro
16 merguez sausage links
¼ cup extra virgin olive oil
Cook the French fries according to package directions. While fries are cooking, in a heavy-bottomed cast iron pan cook the merguez over high heat in the olive oil until crisp and brown on one side and just cooked through. Split the rolls open from the top and smear about 1 tablespoon of harissa aioli down the middle, place one sprig of cilantro and three to four merguez links in the roll. Season the hot fries with salt and pile them on each sandwich in equal parts. Drizzle a little more aioli and garnish with the remaining cilantro.
*To make ½ cup harissa aioli, mix ¼ cup harissa with ¼ cup of mayonnaise.
