How To Make The Tullamore D.E.W. Honey Highball, A Sweet & Simple Whiskey Cocktail

The high heat of summer might seem a rather unusual time to sip on one of the best Irish whiskies, but thinking outside the box (and outside the confines of a typical bar cart) can yield surprising, refreshing and yes, delicious results. The new Tullamore D.E.W Honey expression captures the imagination, veers into new territory for the vaunted Irish whiskey maker, and delivers quite the cocktail when executed properly.
The popular Irish whiskey brand debuted its new Honey expression earlier this year, expanding horizons beyond its triple-distilled, triple-blended whiskey making process. “Tullamore D.E.W. Honey has all the depth and character of the beloved Tullamore D.E.W. Original,” said Clodagh Mai O’Callaghan, Tullamore D.E.W. US Ambassador, adding that innovation makes the difference as “we carefully blend Tullamore D.E.W. Original with Natural Bohemian Honey, sourced solely from Bohemia in the Czech Republic.”
Of the craftsmanship behind the liqueur, and the careful sourcing of honey for the new expression, O’Callaghan said the Bohemian region in the Czech Republic “is renowned for producing the world’s highest quality natural honey, upheld by independent beekeepers who nurture their bees with unparalleled care and dedication.” The result is an endlessly smooth, distinctive whiskey sure to please even non-whiskey fans, and it also works extremely well in a truly classic Irish Coffee, as we found out during a recent distillery visit.
The new expression also carries with it a bold, fresh and modern new label, also seen across the entire Tullamore D.E.W. lineup. The revamped label celebrates the Irish Wolfhound and pays homage to Tullamore founder Daniel Edmund Williams: “The Irish Wolfhound, a symbol of love and devotion, embodies Tullamore D.E.W’s rich history,” O’Callaghan said. The distillery of today even has its own Irish wolfhound (Isobel), a further nod to heritage, the town of Tullamore and the whiskey’s deep and distinctly Irish roots.

Of the cocktail, O’Callaghan called the Honey Highball “one of my favorite cocktails for sipping during these hot summer days,” adding that “every sip carries a sense of sweetness and warmth. - 2 parts Tullamore D.E.W. Honey
- 4 parts lemonade
- Fresh cubed ice
- Lemon wedge (optional)
- Method: Combine all ingredients. Stir and pour.
